2 cups rice coarsely ground or cream of rice
1/4 cup yellow lentils, coarsely ground
2 teaspoons salt or as per taste
5 cups water
1/4 cup fresh, grated coconut





For Seasoning
1 tablespoon oil
1 teaspoon black, mustard seeds
2 teaspoons white split gram beans
2 green chilies, chopped
4 curry leaves
1 dry red chili

Method


Mix the ground rice and ground yellow lentils and set aside.
Heat a pan, over medium heat and pour the oil. When the oil is hot, add the mustard seeds. When the mustard seeds are about to crackle, add the white split gram beans. A little before the white split gram beans turn brown, add the chopped green chilies and the dry red chili. When the white split gram beans turn brown, add the curry leaves, water and salt.
When the water boils, lower the heat and gradually add the mixture of rice and yellow lentils and keep on stirring. Add the grated coconut. When the mixture thickens and there is no water, remove from heat.
When the cooked mixture is a little cool, make small, round balls or oval-shaped balls and place the balls in a steamer or Idli steamer tray and steam cook for 10-15 minutes. Serve with Chutney.

1 cup rice flour
2 tablespoons white flour (maida)
1 teaspoon salt or as per taste
2 tablespoons yogurt
1 1/2 teaspoons oil for making each Rawa Dosai

For Seasoning
2 teaspoons oil
1 teaspoon black, mustard seeds
1/2 teaspoon cumin seeds
2 teaspoons white split gram beans
2 green chilies, chopped
1 dry red chilies (optional)
4 curry leaves
1 tablespoon coriander leaves, chopped (optional)

Method




Steam the cream of wheat or dry roast it. Mix yogurt with cream of wheat and keep for 15 minutes. Add rice flour, white flour, salt and enough water to the cream of wheat, and make a thin batter and set aside.
Heat the oil and when oil is hot, add the mustard seeds. When the mustard seeds are about to crackle, add the cumin seeds, white split gram beans and chilies. When the cumin seeds sizzle and the mixture is brown, pour everything into the batter. This batter should be a little more watery than the regular Dosai batter.
Heat a dosai pan over medium heat and rub a little oil, all around the surface. When the pan is hot, pour a serving spoon of the batter, in a circular motion, all around the edge of the pan, about 1/4 inch away from the rim of the pan. Allow the batter to flow down to the centre. Take more batter if required, and fill up the parts that are without batter. Pour 1 tsp. oil all around the edge of the Dosai and also inside. When the bottom-side is crisp and brown, turn over, pour 1/2 tsp. oil, and cook the other side, but need not be brown. Remove from heat, and serve with Chutney, Sambaar or Dosamolakapodi.
 Rawa Masal Dosai can be made, by making the stuffing of cooked potatoes and onions like in Masal Dosai, and stuffing the Rawa Dosai.
 Left over batter can be refrigerated and Rawa Dosai can be made on another day. Follow the same procedure as of the refrigerated batter of Dosai.

Method


Add salt to warm water and prepare the dough.
Place a serving spoon of the dough into a hand press noodle maker with a perforated disc. Press the noodles (Idiaappam) with your hand in a circular motion on each idli steamer tray. Sprinkle a spoonful of grated coconut on each idiaappam and steam cook for 15-20 minutes. Serve with sweetened coconut milk, chicken curry or vegetables in spicy gravy.
 Dried Idiaappams available in packets can be soaked in boiled water containing a tsp. of salt. Keep the vessel covered for 5 minutes until noodles are soft, and drain. Break noodles into small pieces and set aside. Heat a pan and pour oil. When oil is hot, add 1 tsp. mustard seeds. When the mustard seeds are about to crackle, add 2 tsp. white split gram beans, 1 tsp. yellow split peas, 2 dry red chilies and 2 Tb. fresh, grated coconut. When the mixture is light brown, pour everything into the broken Idiaappams. This is called Sevai. Serve with Chutney or Pickle.

1/2 cup regular medium grain rice, soaked in water for 4 hours
1/2 cup white split gram beans, soaked in water for 4 hours
2 teaspoons salt


Method





Wash the rice and white split gram beans and drain the water. Grind the rice to a coarse consistancy. Grind separately the white split grams to a fine paste. While grinding, add as little water as possible, as the batter must be thick. Mix the ground rice and white split gram beans paste, add salt and leave overnight to ferment.
Pour 2 cups of water in a pressure cooker or in an Idli maker vessel.
If necessary, add enough water to the batter so it can be spread like a flat muffin. Pour the Idli batter in the shallow indented, perforated trays of the Idli steamer and place them in the Idli maker vessel with enough water or in a pressure cooker with enough water, but without the pressure weight on its lid. Close and steam cook for 15-20 minutes over high heat.
Remove from heat and set aside the trays to cool for 5 minutes. Scoop the Idlis from the trays and place them on a serving dish. Serve hot with Dosamolakapodi mixed with sesame oil, Sambaar or Chutney.
**Left over batter can be refrigerated and Idlis can be made at another time.
**When using refrigerated Idli batter, remove batter from refrigerator and allow to warm to room temperature before making the Idlis. Otherwise, they will not become soft and fluffy.

(if you know what I mean), you might be skeptical about this; and for good reason. A lot of individuals take advantage of people’s pains and sufferings by giving false hopes. There are a lot of acne myths online and offline making it more and more difficult to pin-point what really works and what does not.

I still think that research is the best defense against opportunistic people. Let me cut to the chase and share what I found out after extensive reading and research. Decades ago, witch hazel gained a following in the home remedies for acne industry and the fad just simmered down. Recently, however, it has somehow made a comeback. Many people believe that witch hazel has helped them achieve clearer skin; but many also say that it has actually made their condition worse. In fact, witch hazel as a cure for acne triggers a little debate in the “acne industry.”



So, what makes witch hazel for acne a viable idea? Witch hazel has an anti-bacterial property called tannin acid. Thus, in theory, it can help reduce the inflammation caused by acne and pimple production per se. Moreover, tannin acid is a strong astringent making it great for skin cleansing. Also, witch hazel is known to cause little to no allergic reaction to almost everyone; except for those who are practically allergic to everything – dust, banana, chicken, nuts, toilet paper, regular paper, pencils… oh you get my point.

One other reason why I love the idea of using witch hazel for acne is the fact that it is a natural product; therefore, it does not disrupt the pH balance of your skin. Also, witch hazel is very cheap and accessible; and on top of that, it is easy to use too. Soak a cotton ball with witch hazel solution and apply it of your skin; much like using a regular astringent. You can do this twice a day but never more than thrice.

I personally believe that using witch hazel for acne is an excellent idea. However, let me leave you with this insider tip: try the concoction in less prominent areas of your body first. Assuming that you have acne on your back or what I fondly call “backne”, try the witch hazel solution there first. If you see positive results, then proceed with your face.

Uttappam | The Great Indian Recipes

Ingredients
left over Idli batter
1 tablespoon rice flour
1/2 teaspoon salt or as per taste
1 1/2 teaspoons oil for each Uttappam



For Seasoning
1 teaspoon oil
1 teaspoon black, mustard seeds
2 teaspoons white split gram beans
2 green chilies, chopped
4 curry leaves

For Garnish
1 onions, finely chopped
1 tablespoon coriander leaves, chopped

Method

Mix the rice flour and salt to the left over Idli batter and set aside.
Heat a pan, pour the oil. When the oil is hot, add the mustard seeds and when the mustard seeds are about to crackle, add the white split gram beans. When the mixture is light brown, add the chopped green chilies and the curry leaves. Stir for 1 minute and pour evrything into the batter and set aside.
Heat a Dosai pan, over medium heat and rub some oil on it. When the pan is hot, pour a serving spoonful, of the batter in the centre of the pan and spread it into a thick pancake. Pour 1 tsp. oil around the edge of the pancake. Sprinkle all over the top of the Uttappam, the chopped onions and chopped coriander leaves and lightly press, with an oiled spattula, so that the garnish does not come off while turning over the pancake. When the bottom-side is brown, turn over the pancake, pour 1/2 tsp. oil and cook, but need not be brown. Turn it over, so that the garnished side is on top. Serve hot, with Chutney, Sambaar or Dosamolakapodi.

Ingredients
1/2 cup Uncle Ben's rice (Parboiled rice), soaked in water for 4 hours
2 cups regular medium grain rice, soaked in water for 4 hours
1/2 cup white split gram beans, soaked in water for 4 hours
2 teaspoons salt
1 1/2 teaspoons oil for each dosai

Method



Wash the rice and white split gram beans and drain the water. Grind the rice and white split gram beans to a fine paste. Add little water as possible. Mix the ground rice and white split gram beans together, add salt and leave overnight to ferment.
If necessary, add enough water to the batter so it can be poured and spread on the thick iron griddle (dosai pan).


Heat the dosai pan and brush with a little oil. When hot, pour the batter with a serving spoon in the centre of the pan, and quickly spread it in a circular motion so that the batter does not stick to one place and form lumps. Pour 1 teaspoon oil gradually along the edges and then inside. When the bottom side of the Dosai is light brown, turn it over. Pour 1/2 teaspoon oil into the inside in a circular motion. When the bottom side is cooked, need not be brown, remove the Dosai from the pan. Serve hot with Dosamolakapodi mixed with sesame oil or Sambaar or Chutney.
** Left over batter can be refrigerated and Dosais can be made at another time.
** When using refrigerated Dosai batter, remove batter from refrigerator and allow to warm to room temperature before making the Dosais.Otherwise, the batter will form into lumps and cannot be spread thin and round.
** You can make a stuffing of cooked potatoes and onions and make a stuffed Dosai called Masal Dosai.

Ingredients
4 potatoes, boiled, peeled and mashed


For Seasoning
2 onions cut in strips lengthwise
1 teaspoon ginger root, chopped
2 green chilies, chopped
4 curry leaves
1/4 teaspoon turmeric powder
2 tablespoons oil
1 teaspoon black, mustard seeds
2 teaspoons white split gram beans
2 teaspoons salt or as per taste

Method


Heat a pan and add oil. When the oil is hot, add the mustard seeds. When seeds are about to crackle, add the white split gram beans. When the white split gram beans are light brown add the chopped onions, green chilies, ginger and curry leaves. When the onions are soft, add the mashed potatoes, turmeric powder and salt. Mix everthing well and cook on low heat for 3 minutes, stirring occasionally. Remove from heat and set aside.
Make the Dosai. When one side is brown, turn over and when the other side is cooked (need not be brown), turn over. Put 1 serving spoon of the stuffing in the centre of the dosai and spread from top to bottom. Fold both sides one over the other, pressing lightly and remove from pan. Serve hot. Masal Dosai can be eaten as it is or served with Chutney and Sambaar.
When the water boils, reduce the heat, gradually add the fried vermiceli and keep stirring, so that lumps are not formed. When it is cooked and has absorbed all the water, remove from heat. Garnish with crushed peanuts or cashew nuts and the chopped coriander. Serve hot with chutney or pickle.

Ingredients
1 1/2 cups medium grain rice
1/2 cup yellow mung beans
1 teaspoon salt or as per taste



For Seasoning
1/2 teaspoon cumin seeds
1/2 teaspoon black peppercorns, crushed
1 teaspoon ginger root, chopped
2 green chilies, cut lengthwise
4 curry leaves
3 tablespoons oil or clarified butter (Ghee)

For Garnish
4-6 cashew nuts fried in clarified butter

Method


Wash rice and yellow mung beans and drain.
Cook in 5 cups of water until very soft. Remove from heat and add salt and mix well.
Heat oil or ghee in a pan and add the cumin seeds, crushed black peppercorns, ginger, green chilies and curry leaves. When the cumin seeds crackle and are brown, add the mixture to the Ven Pongal an dmix well. Garnish with fried cashew nuts. Serve hot with Chutney or Gojsu.

Ingredients
2 cups cream of wheat
2 teaspoons of salt or as per taste
4 cups water



For Seasoning
1 onion, finely chopped
1 green chili, chopped
1 teaspoon ginger root, chopped
4 curry leaves
4 tablespoons oil
1 teaspoon black mustard seeds
2 teaspoons white split gram beans
2 teaspoons yellow split beans

Method




Heat a deep pan, over medium heat and dry roast cream of wheat till light pink in color. Transfer the roasted cream of wheat to a bowl and set aside.
In the same pan add oil. When oil is hot, add the mustard seeds. When mustard seeds are about to crackle, add white split gram beans and yellow split peas. When the mixture is light brown, add chopped ginger, chilly, curry leaves and onions. When onions become soft, pour in water and add salt.
When water boils, turn the heat to low and gradually add the roasted cream of wheat, stirring continously, to avoid forming lumps. When the cream of wheat is cooked and no water remains, remove from heat and serve with pickle, sambaar or chutney.
** Vegetable Upma can be made by adding chopped vegetables like carrots, beans, onions and peas. Add 1/4 tsp. turmeric powder also. Instead of fresh peas, frozen ones can also be used.
** Tomato Upma can be made by adding 1 big, or 2 medium chopped tomatoes to the water and after it boils, the cream of wheat can be added. In this variety also, add turmeric powder.

Actually, there is a very good reason for that marketing move; Vitamin E really is a miracle vitamin when it comes to achieving healthy and glowing skin.
Vitamin E is fat-soluble vitamin and if you have been paying close attention to my previous posts on Vitamins for acne, you will know that fat-soluble vitamins are absorbed by the body with the aid of fat cells. As a food source, or even as a supplement, Vitamin E helps our immune system because it is one of the most potent anti-oxidants; more on anti-oxidants later. Anyway, Vitamin E supplements come in many forms – tablets, capsules, or liquid. They may also be applied topically as a cream or oil. However, according to the U.S. National Institute of Health, the natural form of Vitamin E  (taken from food sources) is twice as active as an anti-oxidant as the synthetic vitamin options. The recommended daily intake of Vitamin E is 30 IU and must not exceed 1,500 IU. Like most fat-soluble vitamins, when Vitamin E is taken in excess, the body stores it in our livers and kidneys causing organ damage.

Anti-oxidants are vitamins that bind free radicals in the body. Free radicals can damage the skin making you look 20-30 years older. Simply take a Vitamin E capsule, puncture it with a needle, and squeeze out the oil into your palm. Dab the Vitamin E oil on the area where there are acne scars and blend on downward strokes. Make sure that your face and hands are clean before you do this procedure.

I know I have mentioned earlier that Vitamin E from food sources are twice as potent as those from synthetic supplements. However, you may have noticed that even the top food sources of Vitamin E have very little Vitamin E content. Therefore, taking daily supplements of Vitamin E might not be a bad idea. As always you’ll want to consult with your doctor or dermatologist on how to best proceed.

Aloe Vera for Acne | Aloe Vera gel has a lot of purposes

Aloe Vera gel has a lot of purposes. We started using it for healing burns, damaged skin, and even digestive problems centuries ago. That is why it came as no surprise to me when someone mentioned using Aloe Vera for acne. After all,
it has polysaccharides that are ideal for skin repair.
Does Aloe Vera help acne? Do we now have the million-dollar solution to this world-wide dilemma?



I am sorry to disappoint ladies and gentlemen but our quest for the most effective home remedies for acne does not end here. Does Aloe Vera cure acne? – Yes and no. 1. A routine to cleanse your face using Aloe Vera products. It is best to do it day and night. Regular use of Aloe Vera can significantly improve symptoms of acne.
2. Take a topical Aloe Vera gel and apply it on the heavily affected area. The gel works well as a spot treatment .The gel can also diminish swelling and redness from acne too.
3. Wash your face once in the morning and again in the evening using facial cleansers with Aloe Vera components. There are many soaps and cleansers that incorporate Aloe Vera in their products so make sure you choose one that is ideal for oily skin.
